What are your plans this Easter Sunday? Many of us have an elaborate sticky-sweet sugar high of a brunch to throw or attend. This Easter make/suggest a healthier brunch option…this oh so yummy Greek Berry Parfait! This treat is not only goregous but high in protein, vitamin E, fatty acids, calcium, antioxidants, probiotics, and iron; but low in fat, calories and no processed sugar!
Anthony and I will be attending my parents house this Easter and they like to cook sweet and heavy! This will be my heath-saving addition to the menu.
Makes 1 Parfait!
- ½ c non-fat plain Greek yogurt (one serving)
- ¼ c blueberries
- ¼ c sliced strawberries
- 1 tsp flax seeds
- 1 tsp ginger
- 1 tsp cinnamon
- 1 tbsp sunflower seeds; shelled
- In a bowl layer ¼ c Greek yogurt, blueberries, flax seeds, ginger, remainder Greek yogurt, strawberries, sunflower seeds, and cinnamon.
- Enjoy! Simple as that!
